There’s no better treat than fresh organic asparagus! When paired with our fresh, free range chicken breasts, you have a winning combination!  Here is a simple one-pan recipe great for your busy schedule and taste buds any day of the week!
 

Ingredients

 

  • 3-6 boneless skinless chicken breasts (pound breasts to 1/2 inch thickness)
  • salt and pepper, to taste
  • 1 pound asparagus, ends trimmed
  • 3 tablespoons butter or ghee, divided
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon onion powder
  • salt and pepper, to taste
  • fresh herbs for garnish (optional)


Instructions

  1. Sprinkle chicken breasts with salt and pepper to taste on both sides. Over medium high heat, melt 2 tablespoons butter or ghee in a large pan/skillet. Add the garlic and herbs. Stir and cook for a minute or two until the garlic is fragrant.
  2. Reduce heat to medium and add the chicken.  Cook each side for about 5-7 minutes. Chicken should be nearly, but not completely done.
  3. Move the chicken to the side of the pan.  Add remaining butter or ghee to the cleared portion of the pan.  Once melted, add asparagus. Add salt and pepper to asparagus to taste.  Cook for about 4-6 minutes rotating throughout.  Asparagus should be tender and chicken cooked completely through.
  4. Serve immediately.  Add some fresh black pepper and garnish with fresh herbs if desired.
