- 4 tsp olive oil
- 1/2 cup cooked chickpeas
- 2 cups spinach or salad greens
- 1 can (5oz) Wild Planet Albacore Wild Tuna, undrained
- Your favorite veggies such as:
- Cooked beets
- Shredded carrot
- Sliced cucumber
- Cherry tomatoes
- 1/2 cup tahini
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup water
- Salt and pepper, to taste
In small pan, heat the olive oil. Add the cooked chickpeas and saute until they are golden brown. In two bowls add your greens topped with equal portions of tuna and chickpeas. Top with the rest of the vegetables. In a separate bowl, whisk together the dressing ingredients until smooth. Drizzle over the salad and enjoy!
Any remaining dressing can be stored in the refrigerator in an air-tight container.
